Biltong Soup :


Ingredients

Half a cup of butter
2 beef stocks cubes
2 teaspoon coarsely ground black pepper
Half teaspoon whole nutmeg grated
Half teaspoon freshly ground coriander
1 cup of cake flour
2 cups of milk
8 cups of boiling water
1 cup of coarsely grated cheddar cheese
300 g of finely sliced moist beef biltong from Mufasa Biltong deli
Cream and port to taste
100 g grated blue cheese
Breadsticks for serving

Steps

1.Melt butter in a heavy based saucepan
2.Crumble the stock cubes and add the spices
3.Add flour and heat, stirring continually until the flour begins to melt and simmer
4.Mix in the milk and boiling water, and slowly stir into the flour mixture
5.Stirring continually, heat slowly over medium heat until the mixture begins to simmer and thicken
6.Remove the soup from the heat and stir in the cheddar cheese and half the biltong
7.Do not bring the mixture to boil again, keep warm until ready to serve
8.Stir in a little fresh cream and port just before serving
9.Dish into soup bowls and scatter remaining biltong, and scatter blue cheese on top
