Temperature Control in Biltong Production

Temperature control is essential in the production of premium biltong, ensuring every batch is both safe to eat and consistently high in quality. Traditional South African biltong is carefully air-dried rather than cooked, requiring controlled conditions throughout the drying process to preserve its distinctive flavour, texture, and nutritional value.
At Mufasa Biltong, the drying environment is maintained at an ideal temperature of 20°C to 30°C, allowing the meat to dehydrate gradually without compromising quality. Relative humidity is carefully controlled between 50% and 60%, helping to minimise the risk of mould growth while promoting even drying. Throughout production, the internal temperature of the meat is closely monitored and kept below 40°C, reducing the risk of harmful bacteria such as Salmonella and Escherichia coli while maintaining the authentic characteristics of traditional South African biltong.
All Mufasa Biltong products are manufactured in our HACCP-certified facility in Wangara, Western Australia, where strict food safety procedures and quality control measures are followed at every stage of production. Laboratory Testing for Quality and Food Safety


Laboratory testing forms an integral part of Mufasa Biltong’s quality assurance program. Every production process is supported by routine testing to verify that our products meet Australian food safety standards and consistently deliver the premium quality our customers expect.
Samples are regularly analysed for microbial contamination and tested to confirm that the drying process has achieved the correct moisture reduction. Water activity is measured to ensure it remains below 0.85, helping inhibit the growth of harmful microorganisms. Additional microbiological testing screens for bacteria such as Salmonella and Escherichia coli, while chemical analysis verifies the appropriate levels of curing ingredients and preservatives.
These rigorous quality assurance procedures help preserve the rich flavour, tender texture, natural colour, and shelf stability of our products. Combined with carefully controlled drying conditions and HACCP-certified manufacturing practices, they enable Mufasa Biltong to produce authentic South African biltong that customers throughout Perth and across Australia can enjoy with confidence.
