Biltong Soup

organic

Half a cup of butter
2 beef stocks cubes
2 teaspoon coarsely ground black pepper
Half teaspoon whole nutmeg grated
Half teaspoon freshly ground coriander
1 cup of cake flour
2 cups of milk
8 cups of boiling water
1 cup of coarsely grated cheddar cheese
300 g of finely sliced moist beef biltong from Mufasa Biltong deli
Cream and port to taste
100 g grated blue cheese
Breadsticks for serving

1 Melt butter in a heavy based saucepan
2 Crumble the stock cubes and add the spices
3 Add flour and heat, stirring continually until the flour begins to melt and simmer
4 Mix in the milk and boiling water, and slowly stir into the flour mixture
5 Stirring continually, heat slowly over medium heat until the mixture begins to simmer and thicken
6 Remove the soup from the heat and stir in the cheddar cheese and half the biltong
7 Do not bring the mixture to boil again, keep warm until ready to serve
8 Stir in a little fresh cream and port just before serving
9 Dish into soup bowls and scatter remaining biltong, and scatter blue cheese on top
