Temperature control is essential in the production of premium biltong, ensuring every batch is both safe to eat and consistently high in quality. Traditional South African biltong is carefully air-dried rather than cooked, requiring controlled conditions throughout the drying process to preserve its distinctive flavour, texture, and nutritional value.
At Mufasa Biltong, the drying environment is maintained at an ideal temperature of 20°C to 30°C, allowing the meat to dehydrate gradually without compromising quality. Relative humidity is carefully controlled between 50% and 60%, helping to minimise the risk of mould growth while promoting even drying. Throughout production, the internal temperature of the meat is closely monitored and kept below 40°C, reducing the risk of harmful bacteria such as Salmonella and Escherichia coli while maintaining the authentic characteristics of traditional South African biltong.
All Mufasa Biltong products are manufactured in our HACCP-certified facility in Wangara, Western Australia, where strict food safety procedures and quality control measures are followed at every stage of production. This commitment ensures our customers receive authentic South African biltong that is safe, consistent, and of the highest quality.
